THE RESTAURANT
The restaurant ‘AD VINUM’ stands for enjoyment, passion and home. We have dedicated ourselves entirely to the motto "Regionality - Seasonality - Quality". That is why we only serve products from our region. Reduced to the essentials and depending on the season – this is our definition of gourmet cuisine from the Ötztal mountains.
Tastefully arranged in up to seven courses and served in the fine ambience of the new restaurant with 25 seats. If you want to know what the Ötztal tastes like, stop by!

AD VINUM is a Michelin restaurant!
Here's an excerpt from the Michelin Guide rating:
"This restaurant done out in a chic modern-Alpine style is part of the small Chalet Resort Sölden, which boasts five cosy and tastefully decorated log cabins. From 4pm, classic fare in the vein of braised veal cheeks or beef tartare is served; from 7pm, the "Gourmet-Menü", comprising four or six courses, draws inspiration from the region (eg "Pike-perch, white cabbage, mustard" or "Venison, carrot, Savoy cabbage"). Diners can opt for a supplementary cheese course. The produce used is almost exclusively regional, as the friendly, well-trained and attentive service team will explain when talking you through the menu. Be sure to ask for their recommendations when it comes to choosing a wine – the cellar contains over 8 000 labels, including many from Austria. Fondue is also served – in an appropriately cosy atmosphere. Tip: Reserve your table!"

We are very happy about our second toque, awarded by the renowned gourmet guide "Gault & Millau" 2025.
Here is an excerpt from the evaluation by Gault & Millau:
"Where good wine is served, good food is usually also important. According to Ad Vinum's cellar, there are more than 10,000 bottles. All big names from well-known wine-growing regions, but also wines from small and up-and-coming winemakers. Dishes and menus have to score well in order to be noticed. The hosts promise that enjoyment meets home, and they remain true to this promise across the board. For example, it reads like this: Char from the Ötztaler Ache with black radish, Granny Smith and Schüttelbrot crumbs. Beautifully conceived, even more successful and realized with excellent craftsmanship. Attractive table culture, courteous service."

We see this award as confirmation that we are on the right culinary path. At the same time, it is a further incentive for us to continue to improve in the future!
